Bourbon Chicken
2 pounds boneless chicken breast
1-2 tbsp olive oil
1 garlic clove (crushed)
1/4 tsp ginger
3/4 tsp crushed red pepper flake
1/4 cup apple juice
1/3 cup light brown sugar
2 tbls ketchup
1 tbls cider vinegar
1/2 cup water
1/3 cup soy sauce
heat oil in a large skillet
add chicken pieces until lightly brownremove chicken
add remaining ingredients-heating over medium heat until well mixed and well dissolved.
add chicken and bring to hard boil
reduce heat and simmer for 20 min.
serve over hot rice and enjoy

My husband made this for me on our 1 year anniversary. We make it at least every couple of weeks. It's so quick and easy and tastes a-maze-ing!
Ok, why oh why did you have to make me hungry at 10:40 am with that delicious looking bourbon chicken???!! ;o) I'm trying to lose a few pounds, you know! ha!
